Preparation
Preheat the Grill or Oven
Preheat your grill or oven to 400°F (200°C).
Prepare Vegetable Mixture
In a large mixing bowl, combine the diced pineapple, cubed sweet potato, and halved Padrón peppers.
Season the Vegetables
Add the tandoori masala, olive oil, salt, and lemon juice to the vegetable mixture. Toss well to ensure all the ingredients are evenly coated.
Cooking
Grill or Roast
Transfer the seasoned vegetable mixture onto a baking sheet or grill. Cook for about 20-25 minutes, or until the sweet potatoes are tender and the vegetables are slightly charred, stirring halfway through.
Serving
Serve the Tandoori Chaat
Once cooked, remove the vegetables from the grill/oven and let them cool slightly. Garnish with chopped fresh cilantro and sprinkle chaat masala on top before serving.
