Marinate the Mutton

In a bowl, combine the mutton pieces with turmeric powder, salt, and half of the coarsely ground black pepper. Mix well and let it marinate for at least 30 minutes.

Heat the Oil

In a heavy-bottomed pan or kadai, heat the oil over medium heat.

Sauté Onions

Add the sliced onions to the hot oil and sauté until they turn golden brown.

Add Ginger-Garlic Paste

Stir in the ginger-garlic paste and sauté for another 2-3 minutes until the raw smell disappears.

Cook the Mutton

Add the marinated mutton to the pan. Cook on medium-high heat for 10-15 minutes, stirring occasionally until the mutton is browned on all sides.

Add Green Chilies and Remaining Spices

Add the slit green chilies and the remaining coarsely ground black pepper. Mix well and cook for another 5-10 minutes until the mutton is tender and cooked through.

Check for Salt

Taste and adjust salt if necessary.

Remove from heat, garnish with chopped coriander leaves, and serve hot with lemon wedges on the side.
