    Rinse the canned kidney beans and chickpeas under cold water and drain. Set aside. Chop the onion, mince the garlic, and grate the ginger.

Cooking

    Sauté the onion and spices

    In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant. Add the chopped onion and cook until it turns translucent, about 5 minutes.

    Stir in the minced garlic and grated ginger. Cook for an additional 1-2 minutes until the garlic is golden.

    Add the coriander powder, turmeric powder, garam masala, red chili powder, and salt. Stir well to combine and cook for 1-2 minutes. Then add the diced tomatoes and cook until softened, about 5 minutes.
