Dough Preparation

    Mix the Dough Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Add the oil and mix until crumbly.

    Knead the Dough

    Gradually add water to the flour mixture, kneading until you form a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Cook the Filling

    In a skillet over medium heat, add a tablespoon of oil. Sauté the chopped onion until translucent, about 5 minutes.

    Add Lamb and Spices

    Add the ground lamb to the skillet. Cook until browned, breaking it apart as it cooks, about 8-10 minutes. Stir in the garlic, ginger, green chili, cumin, coriander, garam masala, and salt. Cook for another 5 minutes until fragrant.

    Finish the Filling

    Remove from heat and stir in the chopped cilantro. Let the filling cool for a few minutes.

Assembling and Frying

    Roll the Dough

    Divide the rested dough into small balls (about the size of a golf ball). Roll each ball into a thin circle on a floured surface.

    Fill the Samosas

    Cut each circle in half to form two semi-circles. Take one semi-circle, and form a cone shape by folding it over itself. Seal the edge with a little water and fill with a tablespoon of the lamb mixture. Seal the top edge by pressing it together.

    Fry the Samosas

    Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas in batches, frying until golden brown on all sides, about 5-7 minutes per batch. Remove and drain on paper towels.
