Making the Base

    Boil the Milk

    In a large saucepan, bring the full-fat milk to a boil over medium heat. Stir occasionally to prevent it from burning.

    Simmer and Reduce

    Once boiling, reduce the heat to low and let it simmer for about 30-40 minutes, stirring frequently until it reduces to about half the quantity.

    Add Cream and Sugar

    Stir in the heavy cream and sugar, mixing well. Continue to simmer for another 10-15 minutes until the mixture thickens slightly.

Flavoring the Kulfi

    Incorporate Flavors

    Stir in the cardamom powder, chopped pistachios, saffron strands, and rose water into the mixture. Mix until everything is well combined.

Freezing the Kulfi

    Pour into Molds

    Pour the mixture into kulfi molds or small cups. If using cups, insert a stick into the center of each cup.

    Freeze

    Cover the molds with a lid or plastic wrap and freeze for at least 6-8 hours or until completely set.

Serving

    Unmold and Garnish

    To serve, dip the molds in warm water for a few seconds to loosen the kulfi. Remove them and place on a serving plate. Garnish with chopped almonds and dried rose petals, if desired.
