Method

Preparing the Potatoes

    Wash the Potatoes

    Thoroughly wash the new potatoes under cold running water to remove any dirt or impurities.

    Boil the Potatoes

    Place the washed new potatoes in a large pot and cover with cold water. Add 1 tsp of salt. Bring to a boil over medium-high heat and cook for 15-20 minutes or until the potatoes are tender when pierced with a fork.

    Drain and Cool

    Once cooked, drain the potatoes and let them cool slightly, just enough to handle.

Grilling

    Preheat the Grill

    Preheat your grill (or grill pan) to medium-high heat.

    Prepare the Potatoes for Grilling

    Once the potatoes are cool enough, gently press down on each potato with the palm of your hand to break them apart slightly. This will help them absorb the smoky flavor while grilling.

    Grill the Potatoes

    Drizzle the broken potatoes with olive oil and place them on the grill. Grill for about 5-7 minutes on each side until golden brown and charred.

Making the Gunpowder Mix

    Toast the Seeds

    In a dry skillet over medium heat, toast the cumin seeds and mustard seeds until fragrant, about 2-3 minutes. Remove from heat and set aside.

    Combine the Aromatics

    In a bowl, mix the toasted seeds with smoked paprika. This will be your gunpowder mix.

Finishing Touches

    Toss the Potatoes

    In a large bowl, combine the grilled potatoes, gunpowder mix, and broken butter. Toss gently to coat all potatoes evenly.

    Add the chopped parsley, chives, and dill to the bowl and toss again to distribute the herbs evenly.
