Method
Dough Preparation
- 1
Mixing the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, semolina, and baking powder. Mix well to ensure even distribution of the baking powder.
- 2
Adding Ghee
Add the ghee to the dry mixture and rub it between your palms to incorporate it into the flour until the mixture resembles coarse crumbs.
- 3
Kneading the Dough
Gradually add water to the flour mixture, kneading until a soft and pliable dough forms. Cover the dough with a damp cloth and let it rest for about 30 minutes.
Filling Preparation
- 4
Mixing the Filling Ingredients
In a small bowl, combine the chopped nuts, cardamom powder, sugar, and raisins. Mix well to create the filling.
Sugar Syrup Preparation
- 5
- 6
Adding Aromatics
Remove from heat and add rose water and saffron strands. Stir well and set aside to cool.
Assembling and Frying
- 7
Forming the Balls
Divide the dough into small portions and flatten each portion in your palm. Place a teaspoon of the nut filling in the center and carefully fold the dough around it, shaping it into a smooth ball.
- 8
Frying the Balls
Heat oil or ghee in a deep frying pan over medium heat. Once hot, gently slide in the prepared balls. Fry until golden brown on all sides, turning occasionally.
- 9
Soaking in Syrup
Remove the fried balls and drain on paper towels. While they are still warm, soak them in the sugar syrup for about 10-15 minutes, allowing them to absorb the syrup.
