Preparing the Bhallas

Soak the Dal
In a bowl, soak the split urad dal in water for at least 4 hours or overnight.

Make the Batter
Drain the soaked dal and blend it in a mixer with a little water to form a smooth batter. The batter should be light and fluffy.

Season the Batter
Add salt and cumin seeds to the batter and mix well.

Fry the Bhallas
Heat oil in a deep frying pan. Take small portions of the batter and drop them into the hot oil. Fry until golden brown on both sides. Remove and drain on paper towels.

Soak the Bhallas
Once fried, soak the bhallas in a bowl of water for about 10 minutes to soften them. Drain excess water before serving.
Assembling the Chaat

Prepare the Base
Place 2-3 soaked bhallas on a serving plate.

Add Yogurt
Spread a generous amount of thick yogurt over the bhallas.

Add Chutneys
Drizzle tamarind chutney and green chutney over the yogurt.

Sprinkle chaat masala and red chili powder over the top.

Garnish with finely chopped onions, fresh coriander, and sev.
