Dough Preparation
Mix the Flours
In a large mixing bowl, combine the urad dal flour and rice flour. Mix them well until evenly blended.
Add Spices
Add the black sesame seeds, cumin seeds, and salt to the flour mixture. Stir to incorporate all the spices evenly.
Knead the Dough
Gradually add water to the flour mixture while kneading. Continue to knead until a smooth and firm dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
Rolling and Cooking
Divide the Dough
After resting, divide the dough into small equal portions, roughly the size of a golf ball.
Roll the Papads
On a lightly floured surface, take one portion of dough and roll it out into a thin disc, about 6 inches in diameter. Repeat this for all portions.
Heat the Oil
In a deep frying pan, heat the oil over medium heat until hot but not smoking.
Fry the Papads
Carefully slide one rolled papad into the hot oil. Fry until it puffs up and turns golden brown, about 30 seconds to 1 minute. Remove and drain on paper towels. Repeat the process for the remaining papads.
