Preparation

    Soak the Chickpeas

    Rinse the dried chickpeas under running water. Soak them in enough water for at least 8 hours or overnight to soften.

    Cook the Chickpeas

    Drain the soaked chickpeas and place them in a pressure cooker with 3 cups of water. Cook on high pressure for about 15-20 minutes until tender. Release the pressure and set aside.

    Heat Oil

    In a large pot, heat 2 tablespoons of oil over medium heat.

    Sauté Onions

    Add 1 cup of finely chopped onions to the pot and sauté until they are golden brown.

    Add Ginger-Garlic Paste

    Stir in 1 tablespoon of ginger-garlic paste and sauté for another 2 minutes until fragrant.

    Incorporate Tomatoes

    Add 1 cup of pureed tomatoes and cook for about 5-7 minutes until the oil separates from the mixture.

    Add Spices

    Mix in the slit green chili, 2 tablespoons of chole masala, 1 teaspoon of turmeric powder, and 1 teaspoon of cumin seeds. Stir well to combine.

    Combine Chickpeas

    Add the cooked chickpeas to the pot and stir well to coat them with the spice mixture.

    Simmer

    Pour in 1 cup of water (adjust for desired consistency) and season with salt to taste. Simmer on low heat for 15-20 minutes to let the flavors meld.

    Garnish

    Once done, garnish the chole with fresh coriander leaves before serving.
