Preparation

  1. 1

    Prepare the Quinoa

Rinse the quinoa under cold water. In a pot, combine the rinsed quinoa with 300ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the water is absorbed. Fluff with a fork and set aside.

  2. 2

    Prepare the Chicken

Season the chicken breast with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove from heat and let it rest before slicing.

  3. 3

    Prepare the Sauce

In a small bowl, mix the remaining olive oil, honey, balsamic vinegar, minced garlic, salt, and black pepper to create the sauce.

Assembly

  1. 4

    Combine the Ingredients

In a large bowl, combine the cooked quinoa, spinach leaves, and mixed berries. Drizzle the prepared sauce over the mixture and toss gently to combine.

  2. 5

    Plate the Dish

Slice the rested chicken breast and place it on top of the quinoa and berry mixture. Garnish with fresh mint leaves and sprinkle lemon zest over the top.

Serving

  1. 6

    Serve

Serve the Chicken Berry Britannia warm, optionally with additional balsamic vinegar on the side.
