    Place the basmati rice in a fine-mesh sieve and rinse it under cold running water until the water runs clear. This removes excess starch.

    Soak the Rice

    Soak the rinsed rice in water for about 30 minutes. This helps the rice cook evenly.

Cooking

    Cook the Rice

    In a large pot, bring the whole milk to a boil over medium heat. Add the soaked basmati rice along with the cardamom pods and reduce the heat to low. Stir occasionally to prevent the rice from sticking to the bottom. Cook for about 20-25 minutes, or until the rice is soft and the kheer thickens.

    Add Sugar and Saffron

    Once the rice is cooked and the mixture has thickened, add the sugar and saffron strands. Stir well and let it cook for another 5-10 minutes until the sugar dissolves completely.

    Incorporate Nuts and Raisins

    Add the chopped nuts and raisins to the kheer, mixing well. Cook for an additional 2-3 minutes.

Serving

    Remove the pot from heat. If desired, add rose water for aroma. Serve the kheer warm or chilled, garnished with additional chopped nuts.
