Method

Directions

  1. 1

    Prepare the Ingredients

Finely chop the onion, tomato, and green chilies. Grate the ginger and chop the cilantro leaves.

  2. 2

    Heat the Oil

In a pan, heat the oil or ghee over medium heat until hot.

  3. 3

    Sauté the Onions

Add the chopped onions to the pan and sauté until they become translucent, about 5 minutes.

  4. 4

    Add Tomatoes and Spices

Stir in the chopped tomatoes, green chilies, grated ginger, turmeric powder, cumin seeds, salt, and black pepper. Cook until the tomatoes soften, about 3-4 minutes.

  5. 5

    Beat the Eggs

In a bowl, crack the eggs and beat them until combined. You can add a pinch of salt at this stage.

  6. 6

    Combine Eggs with the Mixture

Pour the beaten eggs into the pan and gently stir to combine with the onion-tomato mixture.

  7. 7

    Cook the Eggs

Cook the eggs on low-medium heat, stirring occasionally, until they are scrambled and cooked through, about 5-7 minutes.

  8. 8

    Garnish and Serve

Once the eggs are cooked, remove from heat and stir in the chopped cilantro leaves. Serve hot with toast or parathas.
