Preparation of the Whiskey Base

Mix the Whiskies
In a mixing glass, combine 1 oz of Amrut Whisky and 1 oz of Nikka Days Whisky. Stir gently until well mixed.
Making the Cocktail

Combine Ingredients
In a cocktail shaker, add the whiskey mixture, 0.5 oz of Dishoom Plum Liqueur, and ice. Shake vigorously for about 15-20 seconds.

Strain
Strain the mixture into a chilled coupe glass, leaving some space for the foam.
Preparing the Aquafaba Foam

Whip Aquafaba
In a separate mixing bowl, add 3 tbs of aquafaba and use a hand mixer or frother to whip until it forms soft peaks (about 2-3 minutes).

Add Sweetness and Flavor
Gently fold in 1 tbs of simple syrup and 0.5 tbs of lemon juice into the whipped aquafaba until incorporated.
Finishing Touches

Top the Cocktail
Spoon the whipped aquafaba foam on top of the whiskey cocktail in the glass.

Finish by garnishing with a sprinkle of lemon zest and placing a slice of plum on the rim of the glass.
