    Prepare the Broth

    In a large pot, bring the vegetable broth to a boil over medium heat.

    Add Vegetables

    Once boiling, add in the sliced bamboo shoots, wood ear mushrooms, minced ginger, and minced garlic. Let it simmer for about 5 minutes.

    Add Tofu

    Gently stir in the cubed tofu and continue to simmer for an additional 3 minutes.

    Thicken the Soup

    In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Slowly add this to the pot while stirring continuously to thicken the soup.

    Season the Soup

    Add the soy sauce, rice vinegar, sesame oil, and ground white pepper to the pot. Stir well to combine.

    Add Eggs

    Slowly drizzle the beaten eggs into the soup while stirring gently to create egg ribbons.

    Garnish and Serve

    Remove the soup from heat and ladle into bowls. Garnish with chopped green onions before serving.
