    Prepare the Prime Rib

    Bring the prime rib roast to room temperature, about 1 hour before cooking. Preheat your smoker to 225°F (107°C).

    Season the Meat

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, rosemary, and thyme. Rub the olive oil over the prime rib and then coat it evenly with the seasoning mixture.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Drain the chips and place them in the smoker box or directly on the coals.

    Smoke the Prime Rib

    Place the seasoned prime rib on the smoker grill, bone side down. Smoke for about 4 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Rest and Serve

    Remove the prime rib from the smoker, tent it with foil, and let it rest for 20-30 minutes before slicing. Serve in 10 oz portions.
