Method

For the Hickory Smoked Fajitas

  1. 1

    Marinate the Flank Steak

In a bowl, combine olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Add the flank steak and marinate for at least 30 minutes.

  2. 2

    Prepare the Vegetables

Slice the bell peppers and onion into strips.

  3. 3

    Smoke the Flank Steak

Preheat your grill or smoker to medium-high heat. Add soaked hickory wood chips for smoke flavor. Grill the marinated flank steak for about 6-8 minutes per side or until desired doneness.

  4. 4

    Sauté the Vegetables

In a skillet, add a little olive oil and sauté the sliced peppers and onion until tender.

  5. 5

    Slice and Serve

Once the steak is cooked, let it rest for a few minutes before slicing it against the grain. Serve with the sautéed vegetables.

For the Green Chile Queso

  1. 6

    Melt the Cheese

In a saucepan over low heat, combine Velveeta, cream cheese, and milk. Stir until melted and smooth.

  2. 7

    Add Flavor

Mix in green chiles, garlic powder, onion powder, and salt. Stir until well combined.

  3. 8

    Garnish

Top with chopped cilantro before serving.

For the Guacamole

  1. 9

    Mash the Avocados

In a bowl, mash the avocados with a fork.

  2. 10

    Mix Ingredients

Add lime juice, diced tomato, chopped red onion, cilantro, and salt. Mix until combined.

For the Flour Tortillas

  1. 11

    Mix Dry Ingredients

In a bowl, whisk together flour, baking powder, and salt.

  2. 12

    Incorporate Fat

Add lard or shortening and mix until crumbly.

  3. 13

    Add Water

Gradually add warm water until the dough forms. Knead until smooth.

  4. 14

    Cook the Tortillas

Divide the dough into small balls, roll out each ball, and cook on a hot skillet for about 1 minute on each side until lightly browned.
