Preparing the Filet Mignon

Season and Encrust
Preheat your oven to 400°F (200°C). Season the filet mignon with salt and black pepper. In a small bowl, mix the cocoa powder, ground coffee, and garlic powder. Rub this mixture generously over the filet mignon.

Sear the Steak
Heat a skillet over medium-high heat. Once hot, add a little oil and sear the filet mignon for 3-4 minutes on each side until a crust forms.

Finish in Oven
Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium rare, or until desired doneness. Remove from oven and let rest for 5 minutes.
Making the Pomegranate Balsamic Reduction

Reduce the Sauce
Reduce heat and let the mixture simmer until it thickens, about 15-20 minutes. Stir occasionally to prevent burning.

Strain and Serve
Once thickened, strain the reduction through a fine mesh sieve to remove any solids. Serve drizzled over the filet mignon.
