Prepare the Filet

    Rub the filet mignon steaks with olive oil, salt, and black pepper. Heat a skillet over high heat, and sear the steaks for 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

Make the Green Chili Queso

    Melt the Ingredients

    In a saucepan over medium heat, combine cream cheese, Monterey Jack cheese, green chilies, milk, garlic powder, and cumin. Stir continuously until the cheese is melted and the mixture is smooth. Set aside.

Prepare the Crab Topping

    Mix the Crab

    In a bowl, combine lump crab meat, lemon juice, and Old Bay seasoning. Gently mix to avoid breaking up the crab meat.

Assemble and Serve
