For the Pork Marinade

Method

Marinate the Pork

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Mix well.

  2. 2

    Marinate the Pork

Add the cubed pork tenderloin to the marinade. Toss to coat the pork evenly. Cover and refrigerate for at least 1 hour, preferably overnight.

Make the Tzatziki Sauce

  1. 3

    Combine Ingredients

In a bowl, mix together greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt until smooth. Refrigerate until ready to serve.

Cook the Pork Souvlaki

  1. 4

    Skewer the Pork

Preheat the grill to medium-high heat. Thread the marinated pork onto skewers.

  2. 5

    Grill the Pork

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.

Assemble the Plate

  1. 6

    Prepare the Pita

Warm the pita bread on the grill for 1-2 minutes until soft.

  2. 7

    Build the Plate

On each plate, place some shredded lettuce, diced tomato, and sliced red onion. Add the grilled pork souvlaki skewers, drizzle with tzatziki sauce, and sprinkle crumbled feta cheese on top.
