    Prepare the Hash

    In a large skillet over medium heat, add the olive oil. Once hot, add the diced house potatoes and cook until golden brown and tender, about 10-15 minutes. Stir occasionally to prevent sticking.

    Add Chorizo and Vegetables

    Add the Mexican chorizo to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes. Then add the corn, black beans, and diced red bell pepper. Stir and cook for an additional 5 minutes until heated through.

    Cook the Eggs

    In another skillet, cook the eggs over easy to your preference. Season with salt and pepper.

    Toast the Muffins

    While the eggs are cooking, split and toast the English muffins until golden brown.

    Assemble the Dish

    To serve, divide the chorizo hash between plates. Top each serving with an over-easy egg, a generous spoonful of pico de gallo, a drizzle of cilantro-jalapeno purée, and a dollop of crema. Serve with toasted English muffins on the side.
