Prepare the Peaches
Slice the peaches in half, remove the pit, and then cut them into wedges. In a small bowl, mix honey, cinnamon, and nutmeg. Toss the peach wedges in this mixture and set aside.
Make the French Toast Batter
In a shallow bowl, whisk together eggs, milk, and a pinch of salt until well combined.
Cook the French Toast
Heat a skillet over medium heat and add 1 tablespoon of butter. Dip each slice of brioche into the egg mixture, allowing it to soak for a moment on each side. Place the soaked bread in the skillet and cook until golden brown on both sides, about 3-4 minutes per side. Repeat with the remaining slices, adding more butter as needed.
Assemble the Dish
On a plate, stack the French toast, top with grilled peaches, a generous dollop of whipped ricotta, and sprinkle phyllo flakes on top for crunch. Drizzle with any remaining spiced honey.
