    Prepare Ingredients

    Chop the corned beef and gruyère cheese into small pieces. Drain the sauerkraut if necessary.

    Whisk Eggs

    In a bowl, whisk together the eggs, salt, and pepper until well combined.

    Cook Sauerkraut

    In a non-stick skillet, melt the butter over medium heat. Add the sauerkraut and sauté for about 2-3 minutes until heated through. Remove from the skillet and set aside.

    Make Omelette

    In the same skillet, pour in the egg mixture and cook for about 2-3 minutes until the edges start to set. Gently push the cooked edges towards the center, allowing the uncooked eggs to flow to the outside.

    Add Fillings

    Once the omelette is mostly set, sprinkle the corned beef, gruyère cheese, and sautéed sauerkraut on one half of the omelette. Drizzle with house Russian dressing.

    Fold and Serve

    Carefully fold the omelette in half over the fillings, cook for an additional 1-2 minutes until the cheese melts, and then slide onto a plate. Top with rye bread crumbles and additional Russian dressing if desired.
