Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced onion and mushrooms, sautéing until the onions are translucent and the mushrooms are browned, about 5-7 minutes. Season with salt and black pepper.

Cook the Ribeye
Push the vegetables to the side of the skillet and add the shaved ribeye to the empty side. Cook until the meat is browned and cooked through, about 3-4 minutes, mixing with the vegetables as it cooks.

Melt the Cheese
Once the ribeye is cooked, place the American cheese slices on top of the meat and vegetables. Cover the skillet with a lid and let it cook for another 2 minutes until the cheese is melted.

Toast the English Muffins
While the cheese melts, split the English muffins and toast them until golden brown.

Assemble the Dish
Place a generous portion of the cheesesteak mixture onto each toasted English muffin half. Serve immediately.
