Prepare the Eggplant
Start by washing the eggplant under cold water. Cut off the ends and slice the eggplant into 1/2 inch cubes. If desired, sprinkle some salt on the cubes and let them sit for about 15 minutes to draw out excess moisture. Rinse and pat dry with paper towels.
Chop the Aromatics
While the eggplant is resting, peel and finely chop the garlic cloves. Rinse the cilantro and chop it coarsely. If you prefer less heat, remove the seeds from the Thai peppers before slicing them thinly.
Sauté the Eggplant
In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the eggplant cubes and sauté for about 5-7 minutes until they start to soften and turn golden brown, stirring occasionally.
Finish the Dish
Stir in the chopped cilantro and season with salt and black pepper to taste. Cook for another minute to allow the flavors to meld together.
Serve
Remove the skillet from heat and transfer the sautéed eggplant to a serving dish. Serve warm as a side dish or over rice for a complete meal.
