Preparation of Mustard Greens

Thoroughly wash the mustard greens under cold running water to remove any dirt or grit. Trim off any tough stems and cut the leaves into bite-sized pieces.

Bring a pot of salted water to a boil. Add the mustard greens and blanch for about 1-2 minutes until they are bright green and tender. Remove and immediately transfer them to an ice bath to stop the cooking process.

In a saucepan, combine the water, white vinegar, sugar, salt, garlic cloves (smashed), and ginger (sliced). Bring the mixture to a boil over medium heat, stirring until the sugar and salt dissolve.

Once boiling, remove the saucepan from heat and stir in the red chili flakes and sesame oil. Let the brine cool to room temperature.

In a clean, sterilized jar, tightly pack the blanched mustard greens.
