    Soak the Noodles

    In a bowl, soak the bean thread noodles in hot water for about 20 minutes or until they are softened. Drain and set aside.

    Prepare the Vegetables

    While the noodles are soaking, julienne the carrots, slice the bamboo shoots, and wood ear mushrooms. Set aside.

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat.

    Stir-Fry the Vegetables

    Add the minced garlic and ginger to the skillet and stir-fry for about 30 seconds until fragrant. Then add the sliced bamboo shoots, julienned carrots, and wood ear mushrooms. Stir-fry for 3-5 minutes until the vegetables start to soften.

    Add the Noodles

    Add the soaked bean thread noodles to the skillet with the vegetables. Pour in the soy sauce and sesame oil. Stir well to combine all ingredients.

    Season the Dish

    Season with salt and pepper to taste. Continue to stir-fry for another 3-4 minutes, ensuring that the noodles are heated through and slightly crispy.

    Finish with Green Onions

    Once done, sprinkle the chopped green onions over the dish and give it a final stir.
