For the Mozzarella Sticks

Prepare the Cheese Sticks
Cut the mozzarella cheese into sticks if not pre-cut. Each stick should be about 4 inches long.

Bread the Cheese Sticks
Coat each mozzarella stick in flour, shaking off excess. Then, dip in the beaten eggs, and finally coat in the breadcrumb mixture, pressing slightly to adhere.

Chill the Sticks
Place the breaded mozzarella sticks on a baking sheet and freeze them for at least 30 minutes. This helps keep the cheese from melting too quickly.

Heat the Oil
In a deep pot, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Sticks
Carefully add the frozen mozzarella sticks to the hot oil, a few at a time, and fry for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, dried basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally, until thickened.

Serve
Remove from heat and serve warm with the mozzarella sticks.
