Make the Pasta
In a large bowl, combine the flour and eggs, and knead until a smooth dough forms. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Sauce
In a large skillet over medium heat, add olive oil and sauté the onion and garlic until translucent. Add pancetta, ground veal, and ground beef. Cook until browned.

Add Tomatoes and Cream
Stir in the crushed tomatoes, salt, and pepper. Simmer for 20 minutes. Add heavy cream and cook for an additional 5 minutes.

Roll Out the Pasta
Roll out the rested dough into thin sheets using a pasta machine or a rolling pin. Cut into tagliatelle strips.

Cook the Pasta
In a large pot of salted boiling water, cook the tagliatelle for 2-3 minutes until al dente. Drain and toss with the sauce.

Serve
Plate the tagliatelle, sprinkle with mozzarella cheese and fresh basil leaves. Serve immediately.
