Foie Gras

Method

Preparation of Apple Cake

    Mix Dry Ingredients

    In a large bowl, combine flour, sugar, baking powder, and cinnamon.

    Combine Wet Ingredients

    In a separate bowl, whisk together eggs, milk, and vanilla extract.

    Combine Mixtures

    Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in chopped apples.

    Bake

    Pour the batter into a greased baking pan and bake at 350°F (175°C) for 30-35 minutes or until a toothpick comes out clean.

Preparation of Date & Apple Purée

    Cook Ingredients

    In a saucepan, combine dates, chopped apples, water, lemon juice, and cinnamon. Bring to a boil and then simmer for 15-20 minutes until apples are soft.

    Purée

    Transfer the mixture to a blender and blend until smooth. Set aside.

Cooking the Foie Gras

    Sear Foie Gras

    Season the foie gras slices with salt and pepper. Heat butter in a skillet over medium-high heat. Sear the foie gras for 30-40 seconds on each side until golden brown.

Assembly

    Plate the Dish

    Serve the seared foie gras on a slice of apple cake topped with a generous spoonful of date and apple purée.
