Preparation Steps

  1. 1

    Cook the Cavatelli

Bring a large pot of salted water to a boil. Add the cavatelli pasta and cook according to package instructions until al dente, about 3-5 minutes. Drain the pasta and set aside.

  2. 2

    Prepare the Mushroom Mixture

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add the wild mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes.

  3. 3

    Add Peas and Combine

Stir in the English peas and cook for an additional 2-3 minutes until heated through. Season with salt and black pepper to taste.

  4. 4

    Combine Pasta and Sauce

Add the cooked cavatelli to the skillet with the mushroom and pea mixture. Toss to combine, adding a splash of pasta water if needed to loosen the sauce.

  5. 5

    Finish with Pecorino

Remove the skillet from heat and stir in the grated Pecorino Romano cheese until melted and creamy. Adjust seasoning if necessary.

  6. 6

    Garnish and Serve

Plate the cavatelli and garnish with chopped fresh parsley. Serve immediately.
