Preparation Steps

Prepare the Pork Belly
Preheat your oven to 150°C (300°F). Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat. Season with salt and black pepper.

Make the Apple Cider Glaze
In a saucepan, combine apple cider, brown sugar, soy sauce, minced garlic, and fresh thyme. Simmer over medium heat until the mixture reduces and thickens, about 15-20 minutes.

Cook the Pork Belly
Place the pork belly in a roasting pan and pour the glaze over it. Roast in the preheated oven for 2-2.5 hours, basting occasionally with the glaze.

Crispy Finish
Increase the oven temperature to 220°C (425°F) for the last 20-30 minutes to achieve a crispy skin. Keep an eye on it to prevent burning.
