Prepare Duck Confit
In a large pot, place the duck legs and cover them completely with duck fat. Cook on low heat for 2-3 hours until the meat is tender and can be easily pulled from the bone. Let cool in the fat and refrigerate for up to a week.

Prepare Duck Gravy
In a saucepan, melt 2 tablespoons of duck fat over medium heat. Whisk in flour and cook for 1-2 minutes until lightly browned. Gradually add the broth while whisking to prevent lumps. Stir in soy sauce, black pepper, and thyme. Simmer until thickened, about 5-10 minutes.

Assemble Poutine
On a plate, layer the hot fries, followed by shredded duck confit. Pour duck gravy generously over the top. Finally, sprinkle cheese curds and top with pickled spring garlic. Serve immediately.
