Prepare the Duck
Rub the duck legs with salt, peppercorns, thyme, and crushed garlic cloves. Cover and refrigerate for at least 24 hours.

Cook the Duck
Preheat the oven to 225°F (107°C). Rinse the duck legs under cold water and pat dry. Place the legs in a baking dish and cover with duck fat. Cook in the oven for 4-6 hours until tender.

Crisp the Duck
Once cooked, remove the duck legs from the fat and let them cool. To serve, heat a skillet over medium-high heat and place the duck legs skin-side down until the skin is crispy.
