    Cook the Bacon

    In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.

    Sauté Vegetables

    Add butter to the pot with the bacon drippings. Sauté the onion, celery, and garlic until softened, about 5 minutes.

    Add Potatoes and Clam Juice

    Stir in the diced potatoes and clam juice. Bring to a simmer and cook until potatoes are tender, about 15 minutes.

    Add Clams and Cream

    Add the chopped clams and heavy cream to the pot. Simmer for an additional 5 minutes.

    Season and Serve

    Season with salt, black pepper, and thyme. Crumble the reserved bacon on top and serve hot with oyster crackers.
