For the Chocolate Soufflé

    Prepare the Chocolate

    Preheat your oven to 375°F (190°C). Grease 4 ramekins with butter and dust with granulated sugar. Place the ramekins on a baking tray.

    Melt Chocolate

    In a heatproof bowl, melt the bittersweet chocolate and 30g of butter over a double boiler until smooth. Remove from heat and let cool slightly.

    Combine Egg Yolks and Sugar

    In a separate bowl, whisk the egg yolks with 100g of granulated sugar until pale and fluffy.

    Mix Ingredients

    Combine the melted chocolate with the egg yolk mixture until well combined.

    Whip Egg Whites

    In a clean bowl, whip the egg whites with cream of tartar until soft peaks form. Gradually add the powdered sugar and continue to whip until stiff peaks form.

    Fold Mixtures Together

    Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the egg whites.

    Bake Soufflés

    Spoon the mixture into the prepared ramekins and smooth the tops. Bake in the preheated oven for 12-15 minutes, until puffed and set.

    Serve

    Remove from the oven and serve immediately with vanilla ice cream and 5 spice anglaise.
