Method

Chocolate Mousse

    Melt the Chocolate

    In a double boiler, melt the dark chocolate over simmering water until smooth. Set aside to cool slightly.

    Whip the Cream

    In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the sugar and continue whipping until stiff peaks form.

    Combine Egg Yolks

    In another bowl, whisk the egg yolks with vanilla extract until slightly thickened. Gradually fold in the melted chocolate.

    Fold in the Cream

    Gently fold the whipped cream into the chocolate mixture until well combined. Be careful not to deflate the whipped cream.

    Chill

    Pour the mousse into serving dishes and refrigerate for at least 2 hours before serving.

Fruit Tart

    Prepare the Cream Cheese Filling

    In a mixing bowl, beat the cream cheese with powdered sugar until smooth and creamy.

    Spread the cream cheese filling evenly over the pie crust.

    Decoratively arrange the mixed fresh fruits on top of the cream cheese filling.

    Glaze with Apricot Jam

    In a small saucepan, heat the apricot jam until melted. Brush it over the fruits for a beautiful glaze.

    Refrigerate the tart for about 30 minutes before slicing and serving.

    Preheat the oven to 180°C (350°F) and line a mini cupcake tray with paper liners.
