For the Buttermilk Fried Chicken

Marinate the Chicken
In a large bowl, combine the chicken pieces and buttermilk. Ensure all chicken is immersed. Cover and refrigerate for at least 2 hours, or overnight for best results.

In a separate bowl, mix together flour, paprika, garlic powder, onion powder, salt, and black pepper.

Fry the Chicken
Heat oil in a large skillet or deep fryer over medium-high heat. Remove chicken from the buttermilk and dredge each piece in the flour mixture, shaking off excess. Fry chicken in batches until golden brown and cooked through, about 12-15 minutes per batch. Drain on paper towels.

Make the Buffalo Sauce
In a small saucepan over medium heat, melt the butter. Once melted, add the hot sauce, garlic powder, and salt. Stir until well combined and heated through. Remove from heat.

Prepare the Blue Cheese Mayo
In a small bowl, combine mayonnaise, crumbled blue cheese, lemon juice, and black pepper. Mix until smooth and well combined.

Assemble the Sandwiches
Toast the buns if desired. Spread a generous amount of blue cheese mayo on each bun. Place a piece of fried chicken on the bottom bun, drizzle with buffalo sauce, and top with baby greens, tomato slices, and house pickles. Cover with the top bun and serve immediately.
