Method

Marinate the Steak

  1. 1

    Prepare the Marinade

In a small bowl, combine olive oil, soy sauce, minced garlic, black pepper, fresh rosemary, and lemon juice. Whisk together until well blended.

  2. 2

    Marinate the Steak

Place the sirloin steaks in a large zip-top bag or a shallow dish. Pour the marinade over the steaks, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Prepare the Sides

  1. 3

    Prepare Potatoes

Preheat the oven to 425°F (220°C). In a bowl, toss the potato wedges with olive oil, paprika, and a pinch of salt. Spread them out on a baking sheet in a single layer.

  2. 4

    Roast Potatoes

Place the potatoes in the preheated oven and roast for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.

  3. 5

    Prepare Asparagus

While the potatoes are roasting, trim the ends of the asparagus and toss them in a separate bowl with salted butter, garlic powder, and a pinch of salt.

  4. 6

    Sauté Asparagus

In a skillet over medium heat, melt the salted butter. Add the seasoned asparagus and sauté for about 5-7 minutes until tender but still crisp.

Cook the Steak

  1. 7

    Preheat Grill or Pan

If using a grill, preheat it to high heat. If using a skillet, heat a tablespoon of olive oil over medium-high heat.

  2. 8

    Cook the Steaks

Remove the steaks from the marinade and let excess marinade drip off. Grill or sear the steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

  3. 9

    Rest the Steaks

Once cooked, remove the steaks from heat and let them rest for about 5 minutes before slicing. This allows the juices to redistribute.

Serve

  1. 10

    Plate the Meal

Slice the rested sirloin steaks and serve alongside the roasted potato wedges and sautéed asparagus. Enjoy your delicious sirloin dinner!
