    Rinse Quinoa

    Rinse the quinoa under cold water in a fine-mesh strainer for about 1 minute. This helps to remove the bitter saponins on the quinoa.

    Cook Quinoa

    In a medium-sized pot, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the quinoa has absorbed all the liquid.

    Sauté Garlic and Onion

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and diced red onion, sautéing for about 3 minutes until they become translucent.

    Add Bell Pepper

    Add the diced bell pepper to the skillet and continue to sauté for another 3-4 minutes until softened.

    Next, add the chickpeas (drained and rinsed), cumin powder, paprika, salt, and black pepper. Stir well to combine all ingredients and cook for 5 minutes, allowing the flavors to meld.
