Method
Preparation and Cooking
- 1
Make the Dough
In a mixing bowl, combine the flour and salt. Create a well in the center and add the eggs, olive oil, and water. Mix until a dough forms and knead for about 5–7 minutes until smooth. Wrap in plastic and let rest for 30 minutes.
- 2
Prepare the Filling
In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped mushrooms and minced garlic, sautéing until the mushrooms are browned. In a bowl, combine the sautéed mushrooms, ground beef, Parmesan cheese, salt, and black pepper. Mix until well combined.
- 3
Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin to about 1/16 of an inch thickness.
- 4
Assemble the Ravioli
Using a round cutter or a glass, cut circles from the rolled-out dough. Place a small spoonful of filling in the center of half the circles. Moisten the edges with water. Top with the remaining dough circles and press to seal.
- 5
Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4–5 minutes or until they float to the surface. Remove with a slotted spoon and let drain.
- 6
Serve
Serve the cooked ravioli with your favorite sauce or simply tossed in olive oil and topped with more grated Parmesan cheese.
