Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add the olive oil.

Mix the Filling
Remove the skillet from heat and let the mixture cool slightly. In a bowl, combine the sautéed mushrooms, ricotta cheese, grated Parmesan, chopped parsley, and season with salt and pepper to taste. Mix until well combined.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll one piece out on a floured surface as thin as possible. Cut into 3-inch squares.

Fill the Ravioli
Place a teaspoon of the filling in the center of each square, then fold the dough over to create a triangle. Press the edges to seal, ensuring no filling escapes.

Cook the Ravioli
Bring a large pot of salted water to a boil. Once boiling, add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
