Dough Preparation

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add the olive oil.

    Gradually mix the flour into the eggs using a fork, then knead the mixture on a floured surface until smooth and elastic, about 8-10 minutes. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Sauté the Mushrooms

    In a skillet over medium heat, add a splash of olive oil. Once heated, add the chopped mushrooms and minced garlic, seasoning with salt and pepper. Sauté until the mushrooms are soft and browned, about 5-7 minutes.

    Mix the Filling

    Remove the skillet from heat and let the mixture cool slightly. In a bowl, combine the sautéed mushrooms, ricotta cheese, grated Parmesan, chopped parsley, and season with salt and pepper to taste. Mix until well combined.

Assembly and Cooking

    After resting, divide the dough into four pieces. Roll one piece out on a floured surface as thin as possible. Cut into 3-inch squares.

    Place a teaspoon of the filling in the center of each square, then fold the dough over to create a triangle. Press the edges to seal, ensuring no filling escapes.
