Prepare the Batter
In a shallow bowl, whisk together the flour, cornmeal, salt, and black pepper.

Coat the Perch
Dip each perch fillet first into the egg wash, allowing excess to drip off, then dredge in the flour mixture to coat evenly.

Fry the Perch
In a large skillet, heat vegetable oil over medium-high heat. Carefully place fillets in the hot oil, cooking 3-4 minutes on each side until golden brown. Remove and drain on paper towels.
French Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips or wedges, as desired.

Prepare the Oil
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully lower the potato strips into the hot oil in batches. Fry for 4-5 minutes until crispy and golden. Remove and drain on paper towels. Season with salt immediately.
Cole Slaw

Prepare the Vegetables
Finely shred the green cabbage and grate the carrot.

Make the Dressing
In a bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well.

Combine the Salad
In a large mixing bowl, add the shredded cabbage and carrot. Pour the dressing over the vegetables and toss until evenly coated.

Chill and Serve
Refrigerate the cole slaw for at least 30 minutes before serving to allow the flavors to meld together.
