Prepare the Haddock
In a shallow bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. In another bowl, whisk together the eggs and milk.

Bread the Fish
Dip each haddock fillet in the egg mixture, coating thoroughly, then dredge in the flour mixture until well-coated. Set aside.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it sizzles when a drop of water is added.

Fry the Haddock
Carefully add the breaded haddock fillets to the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the French Fries
While the fish is frying, cook the frozen French fries according to package instructions until crispy and golden.

Make the Coleslaw
In a large mixing bowl, combine the shredded cabbage and carrots. In a separate bowl, mix mayonnaise, lemon juice, salt, and sugar. Pour the dressing over the cabbage mixture and toss to combine thoroughly.

Place a fried haddock fillet on the bottom half of each hamburger bun. Add a generous dollop of tangy sauce, and cover with the top half of the bun.
