Method
Chicken Marinade
- 1
Prep the Marinade
In a large bowl, combine the buttermilk, garlic powder, onion powder, salt, black pepper, paprika, and cayenne pepper. Mix well until all ingredients are thoroughly combined.
- 2
Marinate the Chicken
Place the whole chicken pieces into the marinade, ensuring they are completely submerged. Cover and refrigerate for at least 4 hours, preferably overnight to enhance flavor.
Breading Mixture
- 3
Prepare the Breading
In a separate large bowl, whisk together the all-purpose flour, cornstarch, baking powder, additional salt, additional black pepper, and additional paprika until evenly mixed.
Broasting
- 4
Preheat the Oil
In a large broaster or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the proper temperature.
- 5
Bread the Chicken
Remove the marinated chicken pieces from the refrigerator. Dredge each piece in the breading mixture, ensuring they are fully coated. Shake off any excess flour.
- 6
Fry the Chicken
Carefully place the breaded chicken pieces into the hot oil. Fry in batches, avoiding overcrowding, for about 10-12 minutes, or until the chicken is golden brown and has an internal temperature of 165°F (74°C).
- 7
Rest the Chicken
Once cooked, transfer the chicken to a wire rack or paper towels to drain any excess oil. Let them rest for 5-10 minutes before serving.
