Rib Preparation and Cooking Directions
1. Prepare the Ribs
Start by rinsing the pork long end ribs under cold water. Pat them dry with paper towels. Trim any excess fat for a leaner bite.
2. Season the Ribs
In a small bowl, mix the salt, black pepper, garlic powder, onion powder, smoked paprika, and brown sugar. Rub this mixture generously all over the ribs, ensuring they are well coated.
3. Marinate the Ribs
Once seasoned, wrap the ribs in plastic wrap and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
4. Preheat the Grill
Preheat your grill to medium heat (about 180-200°C or 350-400°F). If using a charcoal grill, set up indirect heat.
5. Cook the Ribs
Place the ribs bone-side down on the grill. Cook for approximately 2 hours, keeping the grill covered. Baste the ribs with BBQ sauce during the last 30 minutes of cooking.
6. Add Apple Cider Vinegar
In the last 10 minutes of cooking, mix apple cider vinegar with a bit of BBQ sauce and drizzle or spray it onto the ribs for an extra zing.
7. Rest and Serve
Once the ribs have cooked to a nice caramelized finish, remove them from the grill. Let them rest for 10-15 minutes before cutting into individual portions for serving.
