    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved, then stir into the rice. Let it cool.

    Prepare the Filling

    Slice the yellow fin tuna, avocado, and cucumber into thin strips. Set aside.

    Assemble the Sushi Roll

    Lay a sheet of nori on a sushi mat. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top. Sprinkle sesame seeds over the rice.

    Add the Fillings

    Place strips of tuna, avocado, and cucumber in a line across the center of the rice. Drizzle with aji amarillo paste.

    Roll the Sushi

    Using the sushi mat, carefully roll the sushi away from you, pressing gently to keep it tight. Once rolled, wet the edge of the nori to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts for a clean slice.

    Serve

    Serve the sushi rolls with house-made ponzu sauce and additional soy sauce on the side.
