    Prepare the Short Ribs

    Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper.

    Sear the Ribs

    In a large, oven-safe pot, heat olive oil over medium-high heat. Add the short ribs and sear them on all sides until browned. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until the onions are translucent.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for a few minutes.

    Braise the Ribs

    Return the short ribs to the pot and add beef broth and bay leaves. Bring to a simmer, cover the pot, and transfer it to the oven. Braise for 3 hours or until the meat is tender.

    Prepare the Fries

    While the ribs are braising, prepare fries as per your choice (frying, baking, etc.).

    Pickle the Cabbage

    Thinly slice cabbage and soak it in a mixture of vinegar, salt, and sugar for at least 30 minutes.

    Make Chipotle Aioli

    In a bowl, mix mayonnaise with chipotle sauce, garlic, lime juice, and salt to taste.

    Prepare Beer Cheese

    In a saucepan, melt cream cheese and mix it with shredded cheddar cheese, beer, and a pinch of cayenne pepper until smooth.

    Serve

    Plate the braised short rib with fries, pickled cabbage, cebollines, and drizzle with chipotle aioli. Serve with a side of beer cheese and crispy corn tortillas.
