Preparation and Cooking

    Make the Home Fries

    Peel and dice the potatoes into small cubes. In a skillet, heat olive oil over medium heat, add the potatoes, season with salt and pepper, and cook until golden brown and tender, about 15-20 minutes. Stir occasionally.

    Sauté Vegetables

    In a separate pan, heat a little olive oil over medium heat. Add diced onion, mixed bell pepper, and portobello mushrooms. Sauté until the vegetables are soft and translucent, about 5-7 minutes. Season with salt and pepper.

    Prepare the Omelette

    In a bowl, whisk the eggs together. Pour the eggs into a heated non-stick skillet and swirl to coat the pan evenly. Cook on low heat until the edges start to set.

    Add Fillings

    Once the omelette is partially set, add the sautéed vegetables and shredded mixed cheese on one half of the omelette. Fold the other half over and let it cook for another 2-3 minutes until the cheese is melted and the omelette is fully cooked.

    Serve the omelette alongside the homemade home fries. Top the omelette with black corn salsa, tobacco onions, and a drizzle of kimchi aioli.
