    Prepare the Waffles

    In a bowl, combine the cheddar cheese waffle mix with water and stir until smooth. Cook the mixture in a preheated waffle maker according to the manufacturer's instructions until crispy and golden brown.

    Make the Home Fries

    Dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat, add the potatoes, and season with salt and pepper. Cook until golden brown and crispy, about 15-20 minutes, stirring occasionally. Set aside.

    Poach the Eggs

    In a pot of simmering water, crack each egg into a small bowl, then gently slide them into the water. Cook for about 3-4 minutes, until the whites are set but the yolks are still runny. Remove with a slotted spoon and set on a paper towel to drain.
